A practical rule of thumb: if the ingredient list includes items you would not use in a home kitchen (for example glucose‑fructose syrup, carrageenan, polysorbate 80, or soy protein isolate), it is likely ultra‑processed.
Processing exists on a spectrum. Canned tomatoes, plain yogurt, and wholegrain bread are processed but still fit within a healthy diet. Ultra‑processed foods, by contrast, are engineered for hyper‑palatability, long shelf life, and convenience, often displacing freshly prepared meals (5).
This distinction matters because health risks track more closely with the degree of industrial formulation than with “processed” as a blanket label.

Major brands often stay quiet while industry bodies (such as FoodDrinkEurope and national trade associations) lead the defence, arguing that “not all UPFs are bad” and that focus should remain on nutrients rather than processing levels.
Coalitions backed by companies including Coca‑Cola, Kraft Heinz, General Mills, and Nestlé are actively working to block or dilute state‑level UPF and additive laws and to promote national labelling approaches that suit their interests (17).
